PLUM CAKE


Ingredients

For Caramel
1/2 cup sugar (പഞ്ചസാര)
1/2 cup water(വെള്ളം)

Spice powder
3 cloves (ഗ്രാമ്പൂ)
1 cinnamon (കറുവപ്പട്ട)
3  cardamom(ഏലക്ക)
1/2 nutmeg (ജാതിക്കുരു)

Batter
2 cup maida (മൈദ)
1 tsp baking powder(ബേക്കിംഗ് പൗഡർ)
1/2  tsp baking soda (ബേക്കിംഗ് സോഡാ)
1/8 tsp salt  (ഉപ്പ്‌)
1/4 tsp Ginger powder (ചുക്കുപൊടി)
Soaked fruits 1 1/2 cup
1/4 cup cashew nuts (പറങ്കിയണ്ടി)
Orange peel grated (ഓറഞ്ച് തൊലി ചുരണ്ടിയത്‌)
3/4 cup powdered sugar (പൊടിച്ച പഞ്ചസാര)
1 tsp vanila essence ( വാനില എസ്സെൻസ്)
1/4 cup oil(എണ്ണ)
3 eggs (മുട്ട)

In a pan add sugar and heat. When sugar starts to melt stir continuesly. When it turns dark golden brown pour water, boil snd reduced to a syrupy constituency. Set aside for cooling.
In a large bowl beat egg along with , vanila essence, sugar, a pinch of salt,  baking soda
baking powder and powdered spice.Add sunflower oil and beat well. When it becomes fluffy add dry fruits. (Which are soaked in vine for one week, drain mix with some maida .)


Then to this add maida little by little and mix with a spatula. Then add caramalised sugar syrup and mix well.add grated orange peel  and ginger powder.(optional).


Mix well and pour this to a greased dusted cake tin. Put it in the preheated oven and bake about 45 min or till it done. Take from the oven and rest in the tin itself until it cold enough to demould. The plum cake become good when it eat atleast after one day. so leave it for atleast one day and enjoy.
