HOT & SOUR CHICKEN SOUP
First process
Water 1 Ltr (വെളളം)
salt 1/2 tsp (ഉപ്പ്)
Chicken 250 gm (ചിക്കൻ)
Pour water to a pan and add the chicken pieces to this. On a medium heat cook for 30 mins.
After 30 mins switch off the flame. Remove the chicken pieces from stock and when it cool down shred the chicken.
Second process
Oil 2 tbs (എണ്ണ)
Chopped Garlic 1/2 tbs (വെളുത്തുള്ളി)
Chopped ginger 1/2 tbs (ഇഞ്ചി)
Chopped Onion 2 tbs (ഉള്ളി)
Chopped Capsicum 2 tbs(കാപ്സിക്കം)
Chopped Beans 2 tbs (ബീൻസ്)
Chopped Carrot 1(കാരറ്റ്)
Chopped Cabbage 1/4 cup (കാബേജ്)
Vinegar 2 tbs (വിനിഗർ)
Soya sauce 1 tbs (സോയാസോസ്)
Chilly sauce 1 tbs (ചില്ലി സോസ്)
Salt 3/4 tsp to taste (ഉപ്പ്)
Pepper powder 1 tsp (കുരുമുളക് പൊടി)
egg white (മുട്ട വെള്ള) 1
Cornflour 2 tbs (കോൺഫ്ലോർ )
Ina kadai pour oil. Add ginger followed by garlic, then onion and saute well. Add the vegetables one by one and fry 2 to 3 min on high flame.
Add prepared chicken stock.Stir. Then add
shredded chicken boil 4 min.
Add vinegar, soya sauce, redchilli sauce and adjust the taste of salt.
Add pepper powder and mix well.
Add one beated egg white
and mix gradually. Cook for one more minute.
Add water to cornflour and make slurry. Add the slurry gradually to it and stir continuously . Let it boil. When it becomes the right consistency then switch off the flame.
Delicious Chicken Soup is ready.
