Kerala Parotta




Ingredients (Serves 12 Parottas):

  • 4 cup Maida
  • 1 tbsp. Sugar
  • 2 tbsp. Sunflower Oil/ Ghee
  • 1 Egg/ 1/2 cup Milk
  • 2 tbsp. Sunflower Oil extra (for spreading & cooking)
  • Salt as needed
  • Water for kneading


Instructions :

In a large mixing bowl take 4 cup Maida, salt, 1 tbsp. Sugar and 2 tbsp. Sunflower Oil/ Ghee.

Add a beaten Egg to this (you can use 1/2 cup Milk instead).

Now add water slowly and start to knead the dough.

Further, add 1 tbsp. Sunflower Oil and knead well to get a smooth and soft dough. Spread some oil over the dough to prevent it from getting dried up.

Cover and rest it for about 2 hours.

After 2 hours, punch and knead the dough again and make it into small balls.


Cover the balls with a wet cloth so it doesn't get dry.

Take a ball and press it gently. Pull and spread as thinly as possible.

Take this thinly spread dough and make thin layered pleats.


Now roll it into a spiral (don't press hard on that dough as it is super soft).

Cover it with wet cloth.

     

With greased hand, pat and spread the dough to make a slightly thick round parotta. Make sure the layers do not stick to each other.

Now place the parotta onto a hot tawa.

Cook on medium flame until the base is cooked.

Flip over and spread ½ tsp oil. Cook until both sides turn golden brown.

Crush the parotta from both sides using your hands (this helps to separate the layers).

Tasty and easy Kerala Parotta is ready.
