VETTU CAKE (FRIED CAKE)



INGREDIENTS
Maida - 3 cup  + 1 cup  (മൈദ)
Sugar - 1 1/2 cup (പഞ്ചസാര)
Baking soda - less than 3/4 (ബേക്കിംഗ് സോഡാ)
Cardamom powder - 1  tsp (ഏലക്കാപ്പൊടി)
oil - for frying + 3 tbs  (എണ്ണ)
Egg - 3 (മുട്ട)
Turmeric powder - 3 pinches (മഞ്ഞൾപ്പൊടി)
Salt - to taste (ഉപ്പ്)

Vettucake is a popular tea stall snack in kerala.

Method

In a large bowl mix maida salt and oil.

In another bowl, beat the eggs and powdered sugar using a wire whisk until combined. Add baking powder, cardamom powder and a pinch of turmeric powder and mix well.
Add this egg mix to the maida and knead gently to form a smooth dough.(If the dough is sticky, add  more maida.) Brush oil on top and keep it aside for 1 hour.

After an hour take the dough and make it into a log shape and then cut it into  square pieces.

Make two deep criss-cross cut on the top of these square pieces

Boil oil in a pan and turn the flame to minimum.
(Lower the flame to minimum otherwise inner dough will not be cooked properly.)

Fry each piece in minimum heat for about 4-5 minutes flipping them in between to ensure uniform cooking.
Make sure not to over fry the cake as it will become very hard to eat.

Once cooked transfer the vettu cakes to a plate with tissue paper to remove excess oil.

Vettu cake is ready..
