BEEF PICKLE


Ingredients

Beef - 1.5 Kg, cut into small cubes (ബീഫ്)
Mustard 1tsp (കടുക്‌)
Garlic - 15-20 cloves. (വെളുത്തുള്ളി)
Ginger - 2 inch piece, chopped (ഇഞ്ചി)
Green chili - 6 No (പച്ചമുളക്)
Curry leaves 4 sprigs (കറിവേപ്പില)
Chilli powder 5 tbs (മുളകുപൊടി)
Kashmiri chili powder - 6 Tablespoon (പിരിയൻ മുളകുപൊടി)
Turmeric powder 1 tsp (മഞ്ഞൾപ്പൊടി)
Fenugreek powder 1/2 tsp (ഉലുവപ്പൊടി)
Garam Masala -1 1/2 tbs (ഗരം മസാല)
Asafoetida powder 1 1/2 tsp (കായപ്പൊടി)
Oil (എണ്ണ)
Vinegar - 3/4 cup (വിനാഗിരി)
Salt to taste (ഉപ്പ്‌)

For Marination
Chilli powder 1 1/2 tsp (മുളകുപൊടി)
Garam Masala powder - 1 tsp (ഗരം മസാല)
Turmeric Powder - 1/4 tsp (മഞ്ഞൾപ്പൊടി)
Salt - 1 1/4 tsp (ഉപ്പ്‌)

Method

Clean and wash the beef pieces. Drain the water completely.
Marinate the beef pieces with the ingredients for marination and set aside for 30 minutes.

Pressure cook the marinated beef for 15 minutes or till the beef is cooked well on medium heat.

Heat oil in a heavy bottomed pan, add the cooked beef pieces and fry until dark brown on low-medium heat. It should be soft and crispy. Set aside.

Beef Pickle Preparation:
Splutter mustard seeds in the hot oil that we have used to fry beef pieces.

Add ginger, garlic, green chilies, curry leaves and fry till the raw smell goes.

Add red chilli powder, kashmeeri chilli powder, turmeric powder, fenugreek powder, garam masala asafoetida and fry till the raw smell disappears.

Add the vinegar and 1 cup of boiling water  and bring to boil.

Now add the fried beef pieces. Mix well and adjust the salt. Boil for 5 min.

Remove from the heat and allow to cool. Transfer to clean jars (do not use plastic bottles) and use as needed.
