EGG PUFFS
For pastry dough
Maida-500gm(മൈദ)
Vanaspathi(vegetable ghee)-225+25gm(വനസ്പതി)
Sugar -4tsp(പഞ്ചസാര)
Salt as needed
Cold water-1 1/4cup(തണുത്ത വെള്ളം)
For Masala
2 eggs (മുട്ട)
3 chilli(പച്ചമുളക്)
2 onions (സബോള)
Oil(എണ്ണ)
Salt as needed(ഉപ്പ്)
2 tsp ginger garlic paste(വെളുത്തുള്ളി ഇഞ്ചി ചതച്ചത്)
2 tsp chilli powder(മുളകുപൊടി)
1 tsp garam masala( ഗരം മസാല)
1/4 tsp turmeric powder(മഞ്ഞൾപൊടി)
2 tsp coriander powder(മല്ലിപ്പൊടി)
Take flour in a large mixing bowl. Add in salt and sugar and mix well. Now add in 25 grams of vanaspathi and crumble it with your hands. Now add cold water slowly and make into a soft dough and put it in the fridge for 30 mins.
Take the dough from the fridge and roll it with a rolling pin to rectangular shape. Apply 1/3 part of vanaspathi or butter on the top of the dough and fold from both ends. Keep this in the fridge for about 1 hour. After an hour take the dough from the fridge and repeat the same process 3 times.
Each time you have to put in the fridge for about 1 hour.
Meanwhile we can cook the masala.
In a hot pan pour oil.When the oil becomes hot add 2 finely sliced onions and some salt. Fry until translucent. Now add 3 greenchillies and 2 teaspoon ginger garlic paste and fry for a couple of minutes until the raw smell is gone. Add turmeric powder, coriander powder, chillipowder and garam masala powder. Fry and saute adding some water. Add enough water to get correct masala texture.
Keep it aside.
Take the puff pastry dough and cut it into half. Roll one part into a rectangle shape. Repeat the same with the other part. We can store the pastry sheets in freezer to use as needed. Cut the sheet into small rectangular portions for making puffs.
Place 1-2 tablespoon of prepared onion masala at the center depending on how large the rolled puff pastry sheet is. Place half of boiled egg on top of the masala and put some masala on top of the egg piece.
Close the puff by just bring two opposite edges together. After brushing some water gently press the edges. Repeat this with rest of the cut puff pastry sheets. Meanwhile preheat the oven at 220°C for 10mins.
Place the puffs in the baking tray. Bake at 220°C for 20mins to get crispy flaky exterior. Then turn it down to 200℃. Once the top & bottom are golden brown and the pastry is puffed up, remove from oven.
