unniyappam (ഉണ്ണിയപ്പം)

Unniyappam  is a traditional Kerala sweet snack made from flour, banana, jaggery, coconuts and deep fried in ghee or oil.

Ingredients
Coconut - 1/4 Cup (chopped into small pieces) (തേങ്ങാക്കൊത്ത്)
plantain - 5 large (പാളയൻകോടം പഴം)
Jaggery - 250 gm (ശർക്കര)
Rice flour - 250 gm (അരിപ്പൊടി)
Rava 1 1/2 tsp (റവ)
Cardamom Powder - 1/2 tsp(ഏലക്കാ പൊടി)
Sesame Seeds - 1/4 tsp( എള്ള്)(optional)

Oil | Ghee - For frying(എണ്ണ/ നെയ്യ്)

Method
First heat a small pan, add 1 tsp ghee . Roast the chopped coconut pieces until it turns slightly golden brown.
Grind the plantain adding jaggery into it to make a smooth paste.

Now, take a large bowl, add the rice flour, rava, jaggery and plantain mix and mix it well to make a thick batter. Add  sesame seeds(optional) and roasted  coconut mix well.  Leave the batter to rest for 4 to 6 hours.
After  4 hours , take the batter and add enough water to make a smooth consistency. Add a pinch of salt and cardamom powder mix well.
Heat Unniyappam Pan; pour some oil / ghee in each hole and fill 3/4th of the hole with prepared batter. Cook in low-medium flame until  the side turns golden brown. Now flip the appam using the spatula or spoon and cook the other side until they are fully done.
Once fried well the colour will change to the tempting dark brown.
Transfer to the serving plate and enjoy hot.
