Toor Dal / chana dalThuvara parippu) :1 1/2 cup
Dry red chillies :2 nos
Shallots/Small Onion : 5-8 nos ( chopped )
Ginger garlic paste 1/2 tsp
Green Chilly : 3 (chopped)
Curry Leaves : 2 strike
Salt to taste
Oil for deep fry
Rinse and soak the dal for about 2 hours.
Drain the dal using a strainer. Leave the dal in the strainer for few minutes till all the water drains off. Grind the soaked dal without adding any water. Do make sure not to make it to a fine paste. Some of the dal will be left as it is. That would be the perfect dough. Add chopped shallots , green chillies, red chillies, curry leaves, ginger garlic paste and enough salt to the ground dal mixture and mix it nicely.Meanwhile heat enough oil in a deep bottom pan in a medium flame.
Take small amount of the dal mixture in your hand and make a ball. Place in the center of the palm and flatten to a round shape. Then slightly press it with your palm and make patties and drop into the hot oil.
Flip and cook until the vada is a dark golden brown and crisp on the outside take out and drain in kitchen tissues. Serve hot with tea and Enjoy!
