DIAMOND CUTS(SWEET & SPICY)



 For sweet diamond cuts

All Purpose Flour / Maida - 1 cup ( മൈദ)
Salt a pinch( ഉപ്പ്)
Oil -1 tbs (എണ്ണ)
Water as needed (വെള്ളം )
Sugar - 1 cup (പഞ്ചസാര)
Oil for Deep Frying

Method:

Mix flour, salt and oil in a bowl. Add enough water and  knead to make the dough. Let it rest for 10 minutes.


After 10 min take the dough and roll it little thin. Now cut it into small diamond shape.

Heat oil for deep frying, drop the diamond in hot oil and fry in medium flame with constant turning to make sure it is evenly cooked. Drain and set aside.

Now make the syrup. Heat sugar and water in a pan, mix well till sugar is melted, now boil it and cook till two string consistency. It will be thick.

Now add the fried diamond cuts in this and coat it well. As it cools the sugar will harden.


For spicy diamond cuts

All Purpose Flour / Maida - 1 cup (മൈദ)
Salt a pinch (ഉപ്പ്‌)
Oil -1 tbs ( എണ്ണ)
Chilli powder 1/2 tsp (മുളകുപൊടി)
Kashmeeri chillypowder 1 tsp(പിരിയൻ മുളകുപൊടി)
Asafoetida powder 1/4 tsp(കായപ്പൊടി)
Sesame seeds 1/4 tsp(എള്ള്)
Ginger paste 1/2 tsp( ഇഞ്ചി പേസ്റ്റ്)

Water as needed (വെള്ളം)


For spicy diamond cuts mix flour salt chillipowder, Kashmeeri chillypowder, asafoetida, sesame seeds ginger paste and add enough water to make the dough. Set aside for 10 mins.


After 10 min take the dough and roll it little thin. Now cut it into small diamond shape.

Heat oil for deep frying, drop the diamond in hot oil and fry in medium flame with constant turning to make sure it is evenly cooked. Drain and set aside.

Cool this completely and store it in an air tight container. This stays good for 2 weeks.
