NOODLES

For noodles
1 cup wheat flour (ഗോതമ്പ് പൊടി)
Salt (ഉപ്പ്)
1 Egg ( മുട്ട)
Water (വെള്ളം)

Garlic (വെളുത്തുള്ളി) 2tsp
Spring onion 1 (സ്പ്രിംഗ് ഒണിയൻ)
Sabola (സബോള) 1
Carrot (കാരറ്റ്) 2
Capsicum ( കാപ്‌സിക്കം) 2
Cabbage (കാബേജ്) 200 gm
1 1/2 tbsp ketchup (കെച്ചപ്പ്)
1 1/2 tbsp soya sauce(സോയ സോസ്)
1/2 tbsp vinegar (വിനാഗിരി)
1/2 tbsp chilli sauce(ചില്ലി സോസ്)
½ tsp salt(ഉപ്പ്‌)
Add enough salt to wheatflour and mix well. Beat an egg and add this to the flour and mix. Adding water slowly to make it into a soft dough. Put it aside for 20 min.
Cut all the vegetables in to julian cuts or 1 inch long thin pieces. Chop garlic into small pieces.
In a large vessel take enough waterband boil it. While boiling add 1 tbs of oil to it.

 Put the dough in a sevanazhi.
Once the water comes to boil  press the dough to the boiling water through the small holes in the bottom of sevanazhi. Boil the noodles for 3 minutes or until it cooks.
Drain off the water from noodles and put it in the cold water to prevent from further cooking. In a large kadai heat 2 tbsp oil and saute  chopped garlic along with chopped spring onion. Then add the vegetables one by one and stir fry on high flame for 2 minutes or until veggies are cooked yet retain their crunch.Mix all the sauses and pour it to this vegetables by turning the flame a little slow. Add 1/2 tsp of sugar in order to balance the taste. Mix well. Then put the flame in high  and add drained noodles and mix all. Taste it and add anything like salt or sauses as you want. Finally, garnish with spring onion and Delicious noodles ready.
