MASALA DOSA WITH ONION CHUTNEY


For Masala


3 medium sized potatoes (ഉരുളകിഴങ്ങ്)
coconut oil (വെളിച്ചെണ്ണ)
mustard seeds (കടുക്)
½ tsp cumin seeds (ജീരകം)
2 sliced onions (സബോള)
2-3 green chilies (പച്ചമുളക്)
2strings curry leaves(കറിവേപ്പില)
1tsp ginger garlic paste(ഇഞ്ചി വെളുത്തുള്ളി പേസ്റ്റ്)
1/2tsp turmeric powder(മഞ്ഞൾ പൊടി)
1/2 tsp chilli powder(മുളകുപൊടി)

1/2 tsp garam masala powder(ഗരം മസാലപ്പൊടി)

First boil  3 medium sized potatoes. Then peel and mash them.  Heat oil  in a frying pan add mustard seeds and let them splutter. Then add ½ tsp cumin seeds .Now add 2 sliced onions, 2-3 green chilies 2strings curry leaves. Saute till they soften and turn translucent. Add 1tsp ginger garlic paste saute well.

Add 1/2tsp turmeric powder,1/2 tsp chilli powder, 1/2 tsp garam masala powder.Then add the boiled mashed potatoes. Now add ½ cup water. Cook till the gravy becomes thick.


For Chutney


1 tbs coconut oil (വെളിച്ചെണ്ണ)

chopped onion (സബോള)

5-6 small onion (ചെറിയുള്ളി)
2 clove garlic (വെളുത്തുള്ളി അല്ലി)
8  dry chillies (വറ്റൽ മുളക്)
tamarind (വാളൻപുളി)

Heat one tbs coconut oil in a pan and add one chopped onion 5-6 small onion cut into two and  2 clove garlic and saute well. Add 8  dry chillies and fry a little. Take from the flame and add a small portion of tamarind. When it cools grind it to a fine chutney.

Making Masala Dosa


urad dal and rice are soaked for 2 hours and then blended together. This makes a creamy and smooth batter. This  batter is fermented overnight to become the batter for dosa.
In a hot dosa  pan pour dosa batter one ladle and  spread it very thin.
Sprinkle some ghee on top and edges.
Cook till its base becomes golden and crisp. 


Place a portion of the potato masala filling on the dosa. You can spread the filling a bit if you want.
Now fold the dosa and serve .
masala dosa hot. It’s delicious with sambar or onion chutney or any of your favorite chutneys.
